Eat Clean Power Pancakes

Originally from Livestrong.com Recipes member "Pedismurf," this recipe sounded too good to pass up. After a few corrections and modifications, I'm pleased to share with you this surprisingly scrumptious breakfast specialty.

#1 Ingredients #2 Mix #3 Cook #4 Flip #5 Serve #6 Closeup

4 Egg Whites (Use the yolks for custard or pasta)
1/2 Cup Cottage Cheese (Fat free is okay to use)
2 Scoops Hammer Nutrition Whey Protein Vanilla
1/2 Cup Dried Oatmeal
4 Tbsp Wheat Germ
4 Tbsp Flax Seed (I recommend milled flax seed for best nutrient absorption)
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp Vanilla Extract

Place all ingredients except egg whites into a food processor and pulse or blend until mixture is uniform. If you don't have a food processor, use a hand mixer.

Beat eggs whites separately and blend into the mixture. (It's not the end of the world if you don't beat the egg whites first.)

Heat your favorite pancake pan/griddle with cooking spray or oil. Ladle 1/3 Cup of mixture for each pancake and heat until golden brown on both sides.
